After having great success with these avocado lime popsicles, I got excited about making more healthy popsicles. Enjoying a nice cold popsicle poolside on a hot summer day is absolutely perfect! Watermelon is the perfect summer treat too so why not combine them, right?
I can’t claim that these coconut watermelon popsicles are original (or even a recipe, for that matter), but they are healthy, delicious, and will quench your parched throat on any hot summer day. Adults will enjoy them and kids will never even miss the sugar-laden store-bought versions since the watermelon adds natural sweetness. It’s a win for everyone!
All you need for these frozen treats is watermelon and coconut water. Blend for a bit and pour into popsicle molds to freeze. These are my favorite popsicle molds (and have been getting A LOT of use recently).
My favorite thing about these popsicles is that they are perfect for my grandson to enjoy. My daughter doesn’t want him to have any sugar or artificial ingredients, especially this early in his life. These popsicles allow him to enjoy the sweet treat of a popsicle. Since he’s still a baby and only licks the popsicle anyway, these are just ideal and a great way for him to experience the taste of watermelon.
- 2 cups cubed watermelon
- 1 cup coconut water
- Blend ingredients in blender until liquidy. If it's too thick, add a little more coconut water.
- Pour into popsicle molds and freeze.
