In our co-op basket this week we received a bunch of apples and pears. I love apples and make it a point to eat one every day but we had a lot of apples in the basket. Pears are a different story though….I will admit that I don’t really care for them. But we have a lot of them and I do want to use them. So I thought it might be a good idea to hide them with other stuff that I really like and see if that would work for me. All of the “experts” suggest that to get your kids to eat vegetables so why wouldn’t it work for me, right? And it did! This is a great use of our apples and pears, fits in with our whole food diet, and was great! A super yummy dessert but without much sugar in it. So really, I could probably have it for breakfast with some coffee. Hmmm…. Anyway, back to the recipe…
Apple and Pear Crisp
Ingredients
- 3 Small Gala apples, cored, peeled, and sliced into small bite-sized pieces
- 3 Pears, peeled and sliced into small bite-sized pieces
- 1 tsp. coconut palm sugar
- 1/2 tsp. Ground Cinnamon
- 3/4 C. Rolled oats
- 1/4 C. organic unsalted butter
- 1/4 C. Pecans, Diced
- 3 Tbsp. coconut palm sugar
- 1 tsp. vanilla Extract
- 3/4 tsp. Ground Cinnamon
- 1/2 tsp. Ground Ginger
- 1/8 tsp. Salt
Directions
In a medium bowl, combine apples and pears. Add in cinnamon and sugar and coat apples and pears. Pour into a lightly misted baking dish. Preheat the oven to 350 degrees. In the bowl used for the fruit, combine the oats, butter, pecans, sugar, vanilla, cinnamon, ginger and salt using a fork. Be sure there are no chunks of butter and mix until it is crumbly.
Distribute the oat mixture on top of the fruit. Bake for 30 minutes or until the top starts to darken. Allow to cool for 15 minutes.
