In case I haven’t mentioned it (like here and here), watermelon is my current seasonal favorite. You just can’t beat the juicy sweetness of a perfectly ripe watermelon. But there are so many other ways to enjoy it too!
One of those ways is this amazingly delicious chunky watermelon salsa. I like to play around with different flavors of salsa, like this cucumber salsa or this pineapple salsa, so watermelon was the next logical choice to experiment with. As much as I love the other salsa and traditional tomato salsa, this chunky watermelon salsa is the perfect taste of summer.
I don’t like salsa that is hot or spicy, so I only added one jalapeno to mine but you can add more if you like it hotter. With any of the ingredients you can put as much or as little as you like. I would recommend keeping watermelon as the main ingredient though because it’s the star of the dish.
And stars need to shine, right? Right!
I’m also going to recommend a solid chip to scoop up this goodness. A flimsy chip won’t get the job done. Just trust me on this one!
I haven’t mentioned how simple this is to make yet! Just chop up the ingredients and combine them in a bowl. You can eat it immediately if you’d like, but I’d recommend letting it chill in the refrigerator for at least an hour. That gives it time for the flavors to blend well. I know it’s hard to wait – but totally worth it!
Ingredients
- 2 Roma tomatoes, diced
- 2 cups watermelon, cubed
- 1/2 onion, chopped
- 1 green bell pepper, chopped
- cilantro
- juice from 1/2 lime
- salt
Instructions
- Add diced tomatoes, watermelon, onion and bell pepper to large bowl.
- Add in finely chopped cilantro (as much or as little as you'd like).
- Pour in lime juice.
- Add a sprinkle of salt.
- Mix all ingredients and chill in refrigerator for at least an hour to allow flavors to combine.
- Serve with chips.
