If you’ve been reading my blog, you know that my family loves red beans and rice. We have it at least 3 times a month. It’s really about the perfect meal – just throw it in the crock pot in the morning and it’s ready when we get home. Add a little rice and you’ve got a healthy, easy, inexpensive meal.
What’s not to love about that, right?
But I was thinking maybe we could be a little more adventurous and try something new with red beans….and that’s how this recipe for Creole Red Bean Soup came about. If you like spicy, you’ll love this….but you can always adjust the amount of seasoning you add. We added shrimp but you could easily leave it out and have a delicious vegetarian dish.
