I was super excited to try out Udi’s Gluten Free Burritos and couldn’t wait to try out a dish I had been thinking about for a while. After picking up a few Udi’s Burritos during a recent trip to Walmart, I grabbed a couple of other ingredients and was ready to make this super easy dish. My family loves Mexican food and burritos are definitely a favorite. But I want to make it look like I put some effort into making dinner. You know what I mean….wiping my brow saying “I’ve been slaving over this hot stove to make this dinner for you” when I was actually standing in the kitchen surfing the internet and playing Trivia Crack on my phone. It’s not my fault no one comes into the kitchen to see what’s going on! I was just efficiently using my time and multi-tasking.
This recipe is beyond easy and your family will never know you didn’t slave over the hot stove, wrapping delicious chicken and cheese into tortillas with love, simmering enchilada sauce for hours and baking it all until the cheese bubbles to perfection. Just 3 ingredients is all you need and about 20 minutes. Only 5 of those minutes are hands-on so you’ve got 15 minutes to do something else. You can meditate, read, take a power nap, surf the internet, or whatever else during that time. I guess you could do the dishes or something but that would likely give away the secret of how easy this dish really is to make.
Let me break it down for you step by step…
Step 1: Buy Udi’s Gluten Free Chicken Burritos. I used 4 so we would each have 1 burrito (and that was plenty for us…they are good sized)
Step 2: Microwave burritos according to package directions and place in a baking dish.
Step 3: Add your favorite enchilada sauce on top (or make your own but that adds to your prep time :))
Step 4: Sprinkle cheddar cheese on top and bake at 350 degrees for about 15 minutes or until cheese is melted.
Step 5: Serve with refried beans and pico de gallo. Don’t forget to wipe your brow from slaving over the hot stove!

Udi’s Gluten Free Chicken Burritos are great to take for a quick lunch but it’s quick and easy to make them into a complete meal for dinner too. I personally don’t have time to whip up a nice dinner every night so this is a great way to get a home-cooked meal on the table in no time.
