Pumpkin Peanut Butter White Chocolate Fudge

Ingredients:

  • 4 cups white chocolate chips
  • 1/2 cup creamy peanut butter
  • 2/3 cup pumpkin puree
  • 2 1/2 teaspoons pumpkin pie spice
  • 2 teaspoons vanilla extract

Instructions:

Prepare the Pan:

  1. Line an 8″x8″ square pan with parchment paper, leaving an overhang on two sides. This will help you easily lift the fudge out of the pan once it’s set. Alternatively, you can grease the pan with nonstick spray.

Melt the White Chocolate and Peanut Butter:

  1. In a medium saucepan over medium-low heat, combine the white chocolate chips and creamy peanut butter. Stir continuously as they melt to ensure a smooth mixture.

Add Pumpkin and Spices:

  1. Once the white chocolate and peanut butter are melted and well combined, remove the saucepan from the heat. Immediately stir in the pumpkin puree, pumpkin pie spice, and vanilla extract. Keep stirring until the mixture is smooth and all the ingredients are fully incorporated.

Pour and Set:

  1. Pour the fudge mixture into the prepared pan. Use a spatula to smooth the top evenly.

Cool and Chill:

  1. Allow the fudge to cool at room temperature for a little while, then transfer it to the refrigerator to chill until it’s completely set. This should take a few hours.

Slice and Serve:

  1. Once the fudge is firm, use the parchment paper overhangs to lift it out of the pan. Place it on a cutting board and carefully slice it into squares or bars using a sharp knife.

Enjoy the Decadence:

  1. Indulge in the rich, creamy, and decadent Pumpkin Peanut Butter White Chocolate Fudge. The combination of the creamy white chocolate, nutty peanut butter, spiced pumpkin puree, and warm vanilla creates a delightful and comforting treat that’s perfect for autumn or any time you’re craving a sweet treat with a seasonal twist.

Storage:

  • Store the fudge in an airtight container in the refrigerator to keep it fresh and maintain its texture. It’s also possible to store it in the freezer for longer periods, simply thaw before enjoying.
