Cook Time: 0 minutes

Total Time: 10 minutes

Yield: Approx. 15-20 bites

Ingredients:

  • 1 cup pistachios, shells removed
  • 2 cups Medjool dates, pitted

Instructions:

Prepare the Pistachios:

  • Add the pistachios to your food processor. Pulse a few times until you get a coarse mixture.
  • Remove and set aside half of the crushed pistachios in a shallow dish. This will be used later for coating the bites.

Blend the Mixture:

  • To the food processor with the remaining pistachios, add the pitted Medjool dates.
  • Blend until the mixture becomes cohesive and forms a sticky ball. Depending on the freshness of your dates, this could take a few minutes.

Form the Bites:

  • Take a small amount of the date-pistachio mix and roll it between your palms to form a bite-sized ball.
  • Once formed, roll the ball in the set-aside crushed pistachios, ensuring it gets a nice even coat.
  • Repeat the process with the remaining mixture.

Serve and Store:

  • These Pistachio Date Bites can be enjoyed immediately.
  • If you prefer them firmer, refrigerate for about an hour before serving.
  • Store any leftovers in an airtight container in the refrigerator for up to a week.

Tips:

  • For an extra touch of flavor, consider adding a pinch of sea salt or a dash of vanilla extract to the date and pistachio mixture.
  • These bites are a fantastic addition to any snack platter or as a sweet treat after meals.
