My schedule this fall has been crazy busy and I’m finding it more and more difficult to get a healthy meal on the table. My marathon training started last week, I’m up to my eyeballs in work, and we’ve been getting ready to welcome our first grandson later this month. I’ve also been dealing with a lot of fatigue and have been sleeping more than normal. Fortunately, I’ve got a great husband that’s willing to help me out and get dinner on the table while I’m busy with everything else. The only catch is that it has to be something super simple that doesn’t require a lot of instructions.
While we were doing our regular grocery shopping at our new Kroger store, I saw Uncle Ben’s® Long Grain & Wild Rice and noticed that it was fast cook and ready in 5 minutes. Rice is a staple in our house because it’s so versatile and goes well with almost everything. We don’t often have long grain rice though, because it takes so long to cook. When I cook rice, I like to season it to tie the flavor into the meal. When we have Mexican dishes, I add a little taco seasoning to spice it up a little. It’s always fun to experiment with rice and see how it turns out.
I picked up a couple of boxes with no specific plan, but knowing that we’d need a quick and easy meal at some point. I love that I can walk into Kroger and get everything I need in one convenient place and everyone is so helpful. Our new Kroger even has clothes, shoes, and jewelry available. And the massive wine section is incredible. It’s super cool that they offer a huge selection of Texas beers and wines. I love being experience all that Texas has to offer!
Enough about wine and back to the recipe now….
Just as I had predicted, we needed a super quick meal one day last week. And it was Uncle Ben’s® to the rescue! Mr. Real Food whipped this shrimp and wild rice dish up in a matter of minutes. It seriously only takes about 10 minutes to completely prepare this dish and it took me even less time to get all the ingredients from Kroger! Check out how fast I was in and out of the the store with everything I needed:
Look how easy this is to make:
Add rice to the water in a medium saucepan.Add the contents of the seasoning packet and butter. The seasoning packet contains 23 herbs and spices that really make the rice super tasty. Uncle Ben’s® found the perfect seasoning combination!
Bring the contents to a boil, reduce heat, cover and simmer 5 minutes.
Remove from heat and let sit 5 minutes until most of the water has been absorbed.
While the rice is cooking, add peeled shrimp to skewers. Using a pastry brush, brush with melted butter and garlic. We like to grill on our George Foreman grill because it’s so easy, but you could also just sautee the shrimp in a small pan with butter and garlic. Make sure shrimp is cooked thoroughly before removing from the grill. Squeeze a little lemon juice over the shrimp and add to the rice.
This might just be one of the quickest and easiest meals we’ve ever made and we’ll definitely be having it again soon!
- For rice:
- 1 box Uncle Ben's® Long Grain & Wild Rice
- 1 tablespoon butter
- 1 3/4 cup water
- For shrimp:
- 1 lb shrimp, peeled and deveined
- 1 tablespoon butter, melted
- garlic salt
- lemon juice
- Prepare Uncle Ben's® Long Grain & Wild Rice according to package directions.
- While rice is cooking, add shrimp to grill or pan and add butter and garlic salt.
- Cook shrimp thoroughly and remove from heat.
- Add lemon juice.
- Top Uncle Ben's® Long Grain & Wild Rice with shrimp and enjoy!
