I didn’t have a lot of time to cook tonight so I really needed something that I could just throw together with whatever I had on hand. We ended up with shrimp pasta and veggies and everyone loved it! You could easily leave out the shrimp and it would be a delicious vegetarian dish. And with a total prep and cook time of under 30 minutes, it’s a quick and easy meal.
