Every family has certain things about them that they keep within their inner circle of friends and family. My family is no different – except that I’m about to expose it to the world. I’ve never publicly admitted this before but admitting it is the first step, right? So here goes….my family eats an excessive amount of salsa…you might even say we are addicts. We all love it! And since we love Tex-Mex food so much, we often find ourselves with a bowl of chips and salsa. I’ve even got a bunch of different recipes that I use salsa in that we eat regularly. In all honesty though, it’s not my entire family that practically drinks the stuff – it’s my husband. While the rest of us get an individual bowl, he gets a gigantic bowl. Trust me….that’s no exaggeration at all!
As a salsa addict, you might say he is a connoisseur of salsa. He’s tried almost every brand under the sun but only has a handful of regular brands. Being the willing salsa-eater he is, he was more than happy to join me on a trip to Sam’s Club to pick up some My Brother’s Salsa. It was no surprise to me when I found out that My Brother’s Salsa was a women-owned business – it’s so handy to have a gift already packaged and ready to give and easy ideas for dinner – they really thought of everything to make my life easier!
I was able to hold him off from pouring a bottle directly into a bowl with the promise of a delicious new recipe. Since the temperature has dropped in the past few days, I was in the mood for some soup. I love making soup in my slow cooker because it’s so easy to just dump a few ingredients in and dinner is ready when we get home. Any recipe I make has to be easy, have very few ingredients, be all natural and make my family happy. This was a MAJOR winner recipe and we’ll be having it again soon and often! This chicken taco soup was a winner in every way! It made a huge batch and we ate it for several days and never got tired of it. If you don’t want to make that much, you can easily cut the recipe in half. It freezes well too so you can always have a healthy, nutritious soup on hand when you don’t have time to cook from scratch. Next time I make this soup, I am going to repurpose some of it by draining the liquid and making quesadillas or burritos. We could have a different meal every night of the week with very minimal effort and it’s super budget friendly!
Look how easy this is to make! Add the chicken, pour on My Brother’s Salsa, and add the rest of the ingredients. It’s really as simple as that! There’s nothing to cut up and nothing to stir so it’s super easy to get started before you leave for work in the morning. It seriously only takes about 3 minutes to prep this and get it going. In the evening, just shred the chicken with a fork and dinner is ready! I’m pretty sure it took me longer to slice the avocado than to make this entire meal!
- 3-4 chicken breasts
- 1 jar My Brother's Salsa Black Bean and Corn
- 4 cups chicken broth
- 2 cans diced tomatoes
- 2 cans black beans, rinsed and drained
- 2 packages of frozen corn
- Taco seasoning
- Optional, for garnish:
- Cheddar cheese
- Tortilla chips
- Add chicken breasts to slow cooker.
- Pour in entire jar of My Brother's salsa.
- Add in diced tomatoes, black beans and corn.
- Add taco seasoning (I used about 3 tablespoons but you can add as little or as much as you'd like)
- Cook on low for 6-8 hours.
- Shred chicken with a fork.
- Garnish with desired garnishments and serve.
