My family has recently tried to eat a vegetarian diet. Prior to this, our meals were all centered around the meat as the main course. That made transitioning to a plant-based diet a little challenging. But as we got used to not having meat as the star of the plate, we realized how many delicious dishes there were that had no meat in them. So I thought I’d gather up some vegetarian and vegan recipes that will make you not miss meat at all!
Main Dishes
Oatly Sweet Potato and Chickpea Curry with Lemongrass
Vegetarian Moroccan Inspired Chickpea Stew
Lemon Basil Rigatoni with a Fresh Veggie Wine Sauce
Lemongrass Quinoa and Carrot Stir Fry
Crockpot Layered Bean Burritos
Peanutty Cucumber “Noodle” Salad
Skillet Cornbread Topped with 3 Bean Chili
Squash and Black Bean Enchiladas
Side Dishes
Fire Roasted Red Pepper Hummus
Vegan Hot Pretzel Challah Bread
Desserts
Banana Bread French Toast Cupcakes
Vegan Mexican Chocolate Pudding
