Coconut Energy Bars

Simple, Nutritious, and Perfect for On-the-Go Energy

Ingredients:

  • 1 cup walnuts
  • 1 cup Medjool dates (approximately 12), pitted and halved
  • 1 cup unsweetened shredded coconut
  • 1 tablespoon coconut oil, melted

Directions:

  1. Prepare the Dish: Start by lining an 8×8-inch baking dish with parchment paper, leaving an overhang on two opposite sides (this will make it easier to lift out the bars later).
  2. Process the Walnuts: Place the walnuts in a food processor and pulse until they are finely ground, resembling a powder.
  3. Add the Dates: Slowly introduce the halved Medjool dates to the processor, pulsing and blending until the mixture starts to become sticky and uniform.
  4. Incorporate the Coconut: Add the unsweetened shredded coconut to the food processor, pulsing to integrate it into the mixture.
  5. Blend with Coconut Oil: Drizzle in the melted coconut oil and continue to process until the mixture is cohesive but still retains some texture.
  6. Press and Shape: Transfer the mixture to the prepared baking dish. Using your hands or the back of a spoon, press the mixture evenly into the dish, ensuring a compact and level surface.
  7. Chill: Place the dish in the refrigerator and allow the mixture to set for at least two hours. This will ensure the bars harden and hold their shape when cut.
  8. Slice and Serve: After chilling, use the parchment paper overhangs to lift the block of mixture out of the dish. Place it on a cutting board and use a sharp knife to slice into bars or squares, according to your preference.

Storage: Store the Coconut Energy Bars in an airtight container in the refrigerator. They should stay fresh for up to a week.

Note: These energy bars are a great pre-workout snack or a quick pick-me-up during a busy day. The combination of walnuts and dates provides sustained energy, while the coconut adds a tropical twist.
