Crock Pot Minestrone Soup

We eat a lot of crock pot soups at my house.  They are delicious, filling, healthy, and easy.  What’s not to love about that?!  Mr. Real Food specifically requested minestrone so this is to honor his request.

It only takes about 20 minutes to prep the ingredients and another 6 or so hours cooking in the crock pot.  Super easy!

Minestrone is a thick and hearty traditional Italian soup that you would find on almost any Italian’s table.

Crock Pot Minestrone


6 cups organic vegetable broth

1 cup carrots, chopped

1 large onion, chopped

3 garlic cloves, minced

1 zucchini, cubed

1 handful baby spinach leaves, chopped

1/2 cup barley, dry

1 14.5 ounce can chickpeas, rinsed and drained

1 tablespoon parsley

1/2 teaspoon thyme

1 teaspoon oregano

1 28 ounce can crushed tomatoes

1 teaspoon salt

1/4 teaspoon pepper

2 cups whole wheat pasta shells (small or medium)


Combine all ingredients in crockpot.  Cook on low 6-8 hours or until pasta and vegetables are tender.
