
Hummus is a delicious and easy appetizer and snack. For this cute little appetizer, I used my basic hummus recipe and made it into a cute little cucumber sandwich. I had a couple cucumbers left from my co-op basket and wasn’t sure what to do with them. This is the perfect appetizer and super easy to make! My family sat at the table and munched on them for a while.
Cucumber Hummus Sandwiches
Ingredients:
1 15 ounce can of chick peas, rinsed and drained
2 teaspoons garlic powder
2 teaspoons cumin
1 tablespoon olive oil
2 cucumbers, sliced
Directions:
Combine chick peas, garlic powder, cumin, and olive oil in food processor and blend until desired consistency (you may need to add a little more oil). Add a spoonful of hummus to a cucumber slice and top with a cucumber slice. Serve and enjoy!
