Sweet Cucumber Salad

Mr. Real Food loves cucumber salad!  So when I saw the cucumbers in my co-op basket, I knew I would be making cucumber salad this week.  He has a special recipe that he uses but it is a little sour for my taste.  This is a sweeter version.  He said he prefers his version (even though he ate an entire bowl of it) but I loved this sweetness of this recipe.  I guess we’ll have to agree to disagree on this one!

Sweet Cucumber Salad


3 large cucumbers, sliced thinly

1 small onion, sliced thinly

1 tomato, chopped

1 cup white balsamic vinegar

1/2 cup water

1/2 cup coconut palm sugar

1 tablespoon dill (or to taste)


Combine all ingredients in a large bowl and stir well.  Refrigerate at least an hour to cucumbers to marinate.  Serve cold or at room temperature.
