Lemon is one of my favorite flavors. I love the way it tastes, especially in a glass of sweet lemonade on a hot summer day. I love how it boosts the flavor of foods without adding extra calories. And I love all the amazing things this little fruit can do around the house that aren’t even about food (check out all of the awesome non-food uses here).
With all the love I have for lemons, I’m kind of surprised I never tried them in my favorite no bake snacks! Seriously – lemon makes these so great! Lemon juice adds the perfect citrus-y flavor to these little bites. And depending on how much (or little) you like lemon, you can adjust the amount you add to make it just right for you!
All you need for this easy recipe is almonds, cashews, dates, and lemon juice. Add those ingredients to the food processor, roll them into balls, and voila! you’ve got a healthy lemony treat to help you fight those afternoon snack cravings!
Healthy Lemon Snack Bites
1 cup raw almonds
1 cup raw cashews
12 Medjool dates, pitted
2 teaspoons lemon juice (more or less to taste)
Add almonds and cashews to food processor and pulse until a fine powder is formed.
Add in dates and lemon juice and pulse until a sticky ball has formed.
Roll into 1 inch balls and refrigerate for about 20 minutes to allow them to set.
These bites are also a great way to get kids involved in the kitchen and learning about healthy eating. Rolling the bites into the little balls is perfect for little hands – not to mention super fun!
