Mediterranean Baked Salmon

Ingredients:

  • Olive oil cooking spray
  • 4 (4-oz) salmon fillets
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 1/2 cups grape tomatoes, halved
  • 1 1/2 cups diced zucchini
  • 1 cup cooked or canned chickpeas, drained and rinsed
  • 1/2 cup diced onion
  • Juice of 1 lemon
  • Crumbled low-fat feta cheese

Instructions:

  1. Preheat and Prepare:

    • Cut four 14-inch squares of aluminum foil and mist the tops of each with olive oil cooking spray.
  2. Assemble the Salmon:
    • Place one piece of salmon on each piece of foil, skin side down.
