Glazed Salmon

I have started serving my family salmon more often because of its incredible health benefits (check out the benefits of this superfood salmon here).  Plus, it’s quick and easy to cook and looks beautiful on the plate!  I usually just throw some seasonings on it and call it good or bake it in a foil packet with some veggies (here’s the recipe for that one – another beautiful one!).  This time I tried something a little different and it’s awesome (and still just as easy as throwing a few spices on it).

Glazed Salmon

Ingredients:

4 salmon fillets

1/4 cup coconut palm sugar

1/4 cup olive oil

3 tablespoons all natural soy sauce

2 tablespoons fresh lemon juice

2 tablespoons white wine, or water (I used wine since I needed to open a bottle anyway :))

Lemon slices, for garnish

Directions:

Preheat oven to 400 degrees.  In a small bowl, combine sugar, oil, soy sauce, lemon juice, and white wine.  Stir until sugar is dissolved.  Lightly mist bottom of baking pan with oil and arrange salmon fillets, skin side down,  in dish.  Coat with glaze, making sure to cover the entire fillet.  Bake 15-20 minutes, periodically basting fillets with excess glaze in dish.  Garnish with lemon slices and serve.
