Ingredients:

  • 15 Medjool dates, pitted
  • 2/3 cup raw peanuts
  • A sprinkle of salt

Instructions:

  1. Preparation: Begin by removing pits from the Medjool dates.
  2. Blend Ingredients: Place the pitted dates, raw peanuts, and a sprinkle of salt into your food processor.
  3. Process: Blend the mixture on a high setting until the ingredients are well combined and begin to form a dough-like consistency. The mixture should form a large ball within the processor.
  4. Shape Cookies: Take small amounts of the dough and shape them into 1-inch balls. If you want to create a cookie look, you can flatten each ball with a fork. Alternatively, if you’d prefer bite-sized treats, you can simply leave them as balls.
  5. Store: Transfer the cookies to an airtight container. They can be eaten immediately, or you can refrigerate them to firm up a bit more.
