Midweek dinners can be challenging for me sometimes.  After getting up early to workout and a long day at work, I don’t have a lot of energy to cook.  Some days it’s tempting to just order pizza or pick up something easy.  But I’m committed to eating foods that nourish my body and that’s how I want to feed my family.  Because food is what fuels our bodies, I know that I need to eat healthy most of the time – and that means even when I’m tired.  Fortunately, I’ve figured out a few key ingredients that I can always have on hand and have dinner ready in a matter of minutes.

Salsa is always something you can find in my pantry.  We love it because it’s so versatile and it’s a great way to kick up the flavor of any food.  We dip it, add it to eggs for breakfast, use it for my salsa chicken recipe, top our tacos, and so many other things.  When I was shopping at Tom Thumb, I noticed the stock up sale and saw that Pace was on sale for 2 for $5 for the 16 oz jars.  Since we use so much salsa, it was the perfect time for me to stock up and save some money.

But now back to the original dilemma – what was quick and easy to make for dinner?  After seeing this recipe for Beefy Taco Joes,  I thought I would switch it up a little bit and make some turkey taco rice bowls.  This turned out to be one of the easiest meals I’ve made and will be a regular for my family!

To make this super easy dinner, you only need these few ingredients:

lb. turkey, jar of Pace chunky salsa, rice, lettuce, tomato, onion and avocado.

Brown the turkey meat in a skillet.

Add onions and cook for 2-3 additional minutes to soften onions.

Add a jar of Pace chunky salsa, reduce heat to low and simmer for 10-15 minutes.  While the turkey taco joes are simmering, cook rice according to package directions.

Add rice to a bowl, add taco joes and top with lettuce, tomato, and avocado or any of your favorite taco toppings and enjoy!

Turkey Taco Joes Rice Bowls


1 lb. turkey
1 yellow onion, chopped
1 16-oz jar Pace chunky salsa
Lettuce, shredded
Tomato, diced
Avocado, sliced


Brown turkey in skillet on high heat.
Add chopped onion, cooking 2-3 minutes until onion has softened.
Reduce heat to low and add jar of Pace.
Simmer 10-15 minutes on low.
While meat is simmering, cook rice according to package directions.
Add rice to bowl, top with taco joes, lettuce, tomato, and avocado or your favorite taco toppings and enjoy!
