Easy Overnight Oats Recipe

Hearty Kielbasa and Spinach Soup

Ingredients:

  • 2 cans Great Northern Beans, drained and rinsed
  • 1 can petite diced tomatoes
  • 6 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 3/4 lb. Turkey kielbasa, cubed
  • 4 cups fresh spinach, washed and chopped

Instructions:

  1. Begin by preparing your ingredients. Drain and rinse the Great Northern Beans, open the can of petite diced tomatoes, and measure out the vegetable broth.
  2. In a slow cooker, combine the drained Great Northern Beans, petite diced tomatoes, vegetable broth, and minced garlic. Stir to ensure the ingredients are well mixed.
  3. Cut the turkey kielbasa into small, bite-sized cubes. This will ensure that each spoonful of the soup has a tasty piece of kielbasa.
  4. Add the cubed kielbasa to the slow cooker with the other ingredients.
  5. Sprinkle the dried oregano over the mixture. This fragrant herb will infuse the soup with a savory aroma and flavor.
  6. Cover the slow cooker and set it to cook on low for 6 to 8 hours. This slow cooking process will allow the flavors to meld and develop, resulting in a rich and comforting soup.
  7. About 30 minutes before the cooking time is complete, stir in the chopped fresh spinach. The spinach will wilt and incorporate into the soup, adding a burst of vibrant color and essential nutrients.
  8. Continue cooking the soup for the remaining 30 minutes. This will allow the spinach to soften and blend with the other flavors.
  9. Once the cooking time is complete, give the soup a final stir to ensure all the ingredients are well combined.
  10. Ladle the Kielbasa and Spinach Soup into bowls and serve it while it’s warm. The tender kielbasa, hearty beans, and nutrient-rich spinach make this soup a satisfying and balanced meal.

Enjoy your homemade Hearty Kielbasa and Spinach Soup as a delicious and nourishing option for cooler days!
