I’ve had so much fun experimenting with different no bake recipes. It’s just so cool that you can take a couple of ingredients, mix them up, roll them in a ball and you’ve got a healthy little snack. I’m finding the possibilities virtually endless!
With a base recipe of nuts and dates, you can go from there and create so many different tastes. I’ve made these chocolate truffles, these raspberry brownie bites, and these pistachio date bites and loved them. That got me wondering what other creations I could come up with. That led me to making these peanut butter cookie bites.
I love a good peanut butter cookie, but almost every recipe I’ve seen has been loaded with sugar. With this recipe, you can do away with the white sugar and use nature’s little sweetener, the date.
If you haven’t tried using dates as a sweetener before, you’re missing out! Dates have actually been shown to help reduce triglycerides, making them heart healthy. Even though they are high in sugar content, they are low on the glycemic index and won’t cause blood sugar surges and the inevitable crash that sugar produces. They can even help with digestive issues because they contain both soluble and insoluble fiber.
But back to the recipe now…these tasty little bites have all the peanut buttery goodness of peanut butter cookies but only need 3 ingredients and no time in the oven. They couldn’t be easier to make!
If you’ve got little people in your house that like to help out in the kitchen, this is the perfect recipe for little hands. You may not want to let them use the food processor, but rolling the dough into little balls is super fun for all ages!
- 2/3 cup raw peanuts
- 12 Medjool dates, pitted
- Pinch of salt
- Add peanuts to a food processor and pulse until they become a fine powder.
- Add in dates and salt and blend until a sticky dough is formed.
- Roll dough into balls and enjoy.
- Cover in an airtight container and store in refrigerator for up to a week.
