Pear and Celery Salad

Ordinarily I don’t eat celery or pears…they just aren’t that high on my list of foods I love but we got lots of celery and pears in our co-op basket so I couldn’t let them go to waste.  But this simple salad was awesome!  I actually had 2 bowls of it!  It takes less than 10 minutes to throw it together and it disappears about as quickly!

Pear and Celery Salad


4 stalks celery, cut into small pieces

3 pears, cut into small pieces

2 tablespoons balsamic vinegar

1 cup freshly grated Parmesan cheese

1/2 cup pine nuts, toasted



Heat oven to 400 degrees Fahrenheit and toast pine nuts for 5 or 6 minutes until lightly brown, stirring about halfway through.  Be sure to keep an eye on them as they can burn quickly.  In a bowl, combine cut celery, cut pears, balsamic vinegar, and pine nuts.  Add in Parmesan.  Top lettuce with pear and celery mixture or just eat it without the lettuce.  Easy and delicious!
