5 Ingredient Healthy Almond Joy Bites

It just occurred to me that the title of this post has more words in it than ingredients.  That’s pretty cool if you like simple no-bake recipes like I do.

And if you like Almond Joy candy bars, you’re going to love this recipe!  They’ve got all the coconut-y goodness of the candy bar but without all the processed ingredients.  I’m all about better-for-you treats!

I made these into little truffles but they could easily be made into mini candy bar shapes or with a layer of chocolate on the bottom to expose the coconut and almond.  The choice is your’s!

Oh….and I forgot to mention how super simple these are to make.  In less than 5 minutes, you can have these babies rolled into balls (or shaped into mini bars) and placed in the fridge to chill.  The hardest part of this recipe is waiting for them to chill.  But that gives you time to sing the almond joy jingle.  Sometimes you feel like a nut….

Then after they’ve chilled for 20 or 30 minutes, top with the melted chocolate, allow it to harden and enjoy.  The waiting really is the hard part!

5 Ingredient Healthy Almond Joy Bites


2 1/2 cups shredded coconut
1 teaspoon vanilla extract
4 tablespoon pure maple syrup
12 almonds
3 tablespoons coconut oil, melted
dark chocolate


Add coconut, vanilla and maple syrup to the food processor and blend until coconut is moist.
Using a spoon, scoop out a spoonful and roll into balls (or shape into ovals).
Place on parchment paper and add one almond to the top of each ball.
Refrigerate 20-30 minutes to allow bites to harden a bit.
Melt chocolate and combine with coconut oil until smooth.
Spoon chocolate mixture over each ball.
Refrigerate about 10 minutes to allow chocolate to harden.
