Chocolate Avocado Pudding

Before you turn your nose up at the title of this recipe, stick with me here and let me explain.

I, too, turned my nose up at the idea of chocolate avocado pudding.  How in the world could avocados be dessert and actually make a delicious pudding?

But I got curious enough to try it.  It looked normal and super rich and creamy. So far, so good.

No way it would taste good though.  So I very carefully tasted a tiny, tiny bit off the end of the spoon (because you never want to eat all of it and then have to spit it out).  Hmmmm…..this is really good!  Taste the entire spoonful.  Hmmm…..does this really taste better than store bought pudding?  Must sample the rest of the cup to test this theory.  YES!!!

This pudding is rich and creamy and healthy and you would never, never, never realize that it was made from avocado.

My recommendation: give it a try and see what you’re missing!

Ingredients
2 medium avocados, pitted and cubed
1/2 cup cacao
1/2 cup pure maple syrup
1/2 cup almond milk
Shredded coconut (optional, to sprinkle on top)

Instructions
Add all ingredients to blender until mixture is smooth and creamy. Enjoy!
