Cilantro Lime Chicken

My family loves, loves, love Mexican food of any kind. That’s actually one of the few types of food we all always agree on.

So it’s no surprise that this Cilantro Lime Chicken was a big hit with all of us. I love that it’s so easy to make, can be prepped the night before, and just thrown in the oven or on the grill.

It’s another healthy and tasty meal ready in just a few minutes. Served with a side of these healthy refried beans and Spanish rice, you can’t go wrong!

Cilantro Lime Chicken


4 chicken breasts
1/2 cup cilantro, chopped
juice from 4 limes


Add all ingredients to baking dish or gallon-size Ziploc bag and allow to marinate in refrigerator at least 4 hours.
Place in 350 degree oven for approximately 30 minutes or until done or grill until desired doneness.
Service with rice and beans.
