Cous Cous
Serves 4
Ingredients:
- 1 cup cous cous
- 1 cup water
- Zest of 1 lemon
- Juice of 1 lemon
- 2 scallions, chopped
- 1-2 tablespoons fresh dill, chopped
Directions:
- Cook Cous Cous: Follow the package directions to prepare the cous cous. Typically, this will involve bringing the water to a boil, adding the cous cous, covering, and removing from heat. Let it sit for about 5 minutes until the water is absorbed.
- Add Flavors: Once the cous cous is cooked and fluffed, stir in the lemon zest, lemon juice, chopped scallions, and fresh dill. Mix well until all ingredients are evenly distributed.
Lemon Dill Shrimp
Serves 4
Ingredients:
- 1 lb. fresh shrimp, raw, shelled and deveined
- 1 tablespoon fresh dill, chopped
- Juice of 1/2 lemon
- Olive oil, for sautéing
- A knob of butter
Directions:
- Preheat the Skillet: Place a skillet over medium heat and add a splash of olive oil, ensuring it evenly coats the base.
- Cook the Shrimp: Once the oil is heated, add the shrimp to the skillet. Sauté the shrimp, making sure they spread out evenly. Cook until they turn opaque or white, which should take about 5 minutes.
- Add Flavors: Reduce the heat to low and sprinkle the fresh dill over the shrimp. Pour in the lemon juice and then add the knob of butter.
- Create the Sauce: Stir the ingredients in the skillet until the butter is melted, and everything is well combined. This will create a light sauce with the lemon and dill flavors infused.
To Serve: Plate the cous cous as a bed on each serving dish. Lay the lemon dill shrimp on top and drizzle with any sauce left in the skillet. Garnish with additional fresh dill if desired.
