Tomato Spinach Salad

Serves 2-3

Ingredients:

  • 2 cups fresh spinach, washed and drained
  • 2 tomatoes, cut into chunks or wedges
  • 6 small mozzarella balls, cut in half
  • 1/2 tablespoon olive oil
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar

Directions:

  1. Prepare Salad Ingredients: Ensure that the spinach leaves are clean, dry, and free from any wilted or damaged pieces. Cut the tomatoes into your desired shape, either in chunks or wedges, for a rustic look. Slice the mozzarella balls in half so their creamy interior is exposed.
  2. Assemble the Salad: In a large salad bowl, gently toss together the fresh spinach, tomato chunks or wedges, and halved mozzarella balls until they are well-mixed.
  3. Prepare the Dressing: In a separate small bowl, combine the olive oil, honey, and balsamic vinegar. Whisk them together until you have a smooth and slightly emulsified dressing. This combination creates a delightful sweet and tangy flavor.
  4. Dress and Serve: Drizzle the honey balsamic dressing over the assembled salad. You can toss it gently once more to ensure that the dressing is well-distributed, or serve it as is for guests to mix themselves.
