
In our co-op basket this week, we got a dozen lemons. I don’t ordinarily use lemons to cook other than the occasional squirt of lemon juice so I wasn’t quite sure what to do with so many lemons. I also had a bunch of chicken that I got on sale at Target. Seemed like a perfect idea to use them both for dinner today! Mr. Real Food was kind enough to cook dinner tonight so I could run. Wasn’t that sweet of him? And it turned out delicious!
Lemon Pepper Chicken
Ingredients:
4 all-natural chicken breasts
3 lemons
Black pepper
Directions:
Preheat oven to 375 degrees. Lightly brush chicken breasts with olive oil in a baking dish. Cut one of the lemons in half and squeeze the juice on each of the chicken breasts. Sprinkle with black pepper. Slice the other 2 lemons and place 2 slices on each piece of chicken. Bake 30-35 minutes or until chicken is done.
We served our chicken with a side of black lentils and broccoli. A delicious, low-calorie meal ready in under 45 minutes!
