My slow cooker is easily my favorite kitchen appliance.  And chicken is one of my favorite meats.  So why not combine the two for a quick and easy weeknight meal that the entire family will love!  This is a fantastic meal that is easy to start in the crock pot in the morning and have a delicious, healthy meal when you get home.  Your actual hands on time is only about 2 minutes.  And this will make plenty (about 8 servings) so you can “repurpose” it the next day into another meal!

Slow Cooker Mexican Chicken


3-4 tbsp taco seasoning
4 large chicken breasts
1 cup low sodium chicken broth or stock


Place all ingredients in a slow cooker and stir until the chicken breasts are well coated in the taco seasoning.
Cook on low for 6-8 hours. The chicken is done when it easily falls apart.

You can serve on homemade whole-wheat tortillas with lettuce, tomatoes and black beans for burritos or soft tacos.  Or you could add it to tortilla soup for added protein.  You could serve it over Spanish rice or make chicken tacos or enchiladas.  The possibilities are virtually endless!
