Ingredients:

  • 1 cup quinoa (uncooked)
  • 1 cup water (for cooking quinoa or as per package instructions)
  • 1 cup cheese (preferably a mild cheese like cheddar), plus a little extra for topping
  • 2 eggs, beaten
  • 1 cup carrots, peeled and shredded
  • 1 cup green beans, washed and sliced
  • Cooking spray or muffin liners (optional, for easy removal)

Directions:

  1. Cook the Quinoa: In a medium pot, cook the quinoa according to the package directions. Once cooked, remove from heat and let it cool for about 15 minutes.
  2. Preheat Oven: While the quinoa is cooling, preheat your oven to 350°F (175°C).
  3. Prepare Muffin Tins: Lightly spray a muffin tin with cooking spray or line with muffin liners to prevent sticking.
  4. Combine Ingredients: In a large bowl, combine the cooled quinoa, cheese, beaten eggs, shredded carrots, and sliced green beans. Mix everything together until all the ingredients are well incorporated.
  5. Fill Muffin Tins: Spoon the mixture into the prepared muffin tins, filling each cup almost to the top. Sprinkle a little extra cheese on top of each muffin for a tasty finish.
  6. Bake: Place the muffin tin in the preheated oven and bake for about 20 minutes, or until the tops are golden brown and a toothpick or fork inserted into the center of a muffin comes out clean.
  7. Cool and Serve: Once baked, remove from the oven and let the muffins cool in the tin for a few minutes. Then, transfer them to a cooling rack and let them cool completely before serving to your dog.
