Ingredients:

  • 1/2 cup uncooked quinoa
  • 1 large egg
  • 1/2 cup chopped onion
  • 1/2 cup shredded mozzarella
  • 1 teaspoon minced garlic
  • 1 tablespoon dried basil
  • 1 teaspoon dried oregano
  • Pinch of salt
  • Pizza sauce (for dipping)

Instructions:

Cook the Quinoa:

  • Start by rinsing the quinoa under cold water using a fine mesh strainer.
  • Cook the quinoa according to the package instructions. Once done, set aside and allow it to cool slightly.

Preheat Oven:

  • Preheat your oven to 350 degrees F (175 degrees C).

Prepare the Mixture:

  • In a large mixing bowl, combine the cooked quinoa, egg, chopped onion, shredded mozzarella, minced garlic, dried basil, dried oregano, and a pinch of salt. Mix well until everything is well incorporated.

Shape and Bake:

  • Using a tablespoon, scoop out the quinoa mixture and press into lightly oiled mini muffin tins, making sure to pack each one tightly.
  • Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the tops are golden and the edges are slightly crispy.

Serve:

  • Remove from the oven and let them cool for a few minutes in the tin before transferring them to a serving plate.
  • Serve warm alongside pizza sauce for dipping.
