Quinoa Veggie Stir-Fry Bowl

Ingredients:

  • 1 cup uncooked quinoa
  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, chopped
  • 1 potato, diced
  • 2 heads of broccoli, florets separated
  • 2 bell peppers (any color), chopped
  • 4 tablespoons soy sauce
  • Sausage (optional, for meat-eaters)

Instructions:

  1. Cook the Quinoa:
    • Cook the quinoa according to the package directions. Once cooked, fluff the quinoa with a fork and set it aside.
  2. Saute Onions and Garlic:
    • In a separate pot or large skillet, heat the olive oil over medium heat. Add the chopped onions and garlic. Sauté for about 5 minutes, or until the onions are softened and translucent.
  3. Add Potatoes and Veggies:
    • Add the diced potatoes, broccoli florets, and chopped bell peppers to the skillet with the sautéed onions and garlic.

  6. Add Soy Sauce:
    • Pour the soy sauce over the cooked vegetables and stir to evenly distribute the flavors.
  7. Assemble the Stir-Fry Bowl:
    • To assemble the bowls, start with a base of cooked quinoa.
    • Top the quinoa with the sautéed vegetable mixture and, if desired, the cooked sausage.
  8. Serve and Enjoy:
