Ingredients:

  • 1/2 pound tomatillos, husked, rinsed, and quartered

  • 2 cloves garlic, peeled and chopped
  • 1/2 cup fresh cilantro leaves
  • 1 ripe tomato, chopped
  • 1/2 teaspoon salt (or to taste)
  • A squeeze of fresh lime juice

Instructions:

  1. Preparation: Start by husking and rinsing the tomatillos. Once cleaned, quarter them and set aside. For a milder salsa, you can remove the seeds from the jalapeño.
  2. Blend Ingredients: In a blender or food processor, combine the tomatillos, chopped jalapeño, garlic cloves, cilantro leaves, and chopped tomato.
  3. Pulse to Mix: Pulse the ingredients a few times to get the juices flowing and initiate the blending process.
  4. Blend to Desired Consistency: Continue to blend on low speed until you achieve a coarse puree. Avoid over-blending if you prefer a chunkier salsa.
  5. Season and Adjust: Pour the salsa into a serving dish. Add salt and a squeeze of fresh lime juice. Taste and adjust the seasoning, adding more salt or lime as necessary.
  6. Optional Thinning: If you find the salsa too thick, you can thin it out with a splash of water to achieve your desired consistency.
