Grilled Shrimp with Wild Rice
Ingredients:
For Wild Rice:
- 1 box Uncle Ben’s® Long Grain & Wild Rice
- 1 tablespoon butter
- 1 3/4 cups water
For Grilled Shrimp:
- 1 lb shrimp, peeled and deveined
- 2 tablespoons melted butter
- 1/2 teaspoon garlic salt
- Juice of 1 lemon
Instructions:
- Prepare Wild Rice:
- Cook the Uncle Ben’s® Long Grain & Wild Rice according to the package directions. Typically, you’ll bring 1 3/4 cups of water and 1 tablespoon of butter to a boil, stir in the rice and seasoning packet, reduce the heat, cover, and simmer for about 25 minutes or until the rice is tender and the water is absorbed.
- Preheat the Grill or Pan:
- Preheat your grill or a pan over medium-high heat for cooking the shrimp.
- Grill the Shrimp:
- In a bowl, toss the peeled and deveined shrimp with melted butter and garlic salt until coated.
- If using a grill, thread the shrimp onto skewers or use a grilling basket to prevent them from falling through the grates. Grill the shrimp for 2-3 minutes per side or until they turn pink and opaque.
- Pan Cook the Shrimp:
- If using a pan, add the shrimp to the preheated pan and cook for 2-3 minutes per side until pink and cooked through.
- Finish with Lemon Juice:
- Remove the cooked shrimp from the heat and drizzle with fresh lemon juice. The lemon juice adds brightness and flavor to the shrimp.
- Serve with Wild Rice:
- Once the Uncle Ben’s® Long Grain & Wild Rice is cooked, fluff it with a fork. Serve the grilled shrimp over the wild rice for a delicious and satisfying meal.
- Garnish (Optional):
- If desired, you can garnish the dish with chopped fresh herbs, such as parsley or chives, to add an extra pop of color and flavor.
