Shrimp and Wild Rice

Grilled Shrimp with Wild Rice

Ingredients:

For Wild Rice:

  • 1 box Uncle Ben’s® Long Grain & Wild Rice
  • 1 tablespoon butter
  • 1 3/4 cups water

For Grilled Shrimp:

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons melted butter
  • 1/2 teaspoon garlic salt
  • Juice of 1 lemon

Instructions:

  1. Prepare Wild Rice:
    • Cook the Uncle Ben’s® Long Grain & Wild Rice according to the package directions. Typically, you’ll bring 1 3/4 cups of water and 1 tablespoon of butter to a boil, stir in the rice and seasoning packet, reduce the heat, cover, and simmer for about 25 minutes or until the rice is tender and the water is absorbed.
  2. Preheat the Grill or Pan:
    • Preheat your grill or a pan over medium-high heat for cooking the shrimp.
  3. Grill the Shrimp:
    • In a bowl, toss the peeled and deveined shrimp with melted butter and garlic salt until coated.
    • If using a grill, thread the shrimp onto skewers or use a grilling basket to prevent them from falling through the grates. Grill the shrimp for 2-3 minutes per side or until they turn pink and opaque.
  4. Pan Cook the Shrimp:
    • If using a pan, add the shrimp to the preheated pan and cook for 2-3 minutes per side until pink and cooked through.
  5. Finish with Lemon Juice:
    • Remove the cooked shrimp from the heat and drizzle with fresh lemon juice. The lemon juice adds brightness and flavor to the shrimp.
  6. Serve with Wild Rice:
    • Once the Uncle Ben’s® Long Grain & Wild Rice is cooked, fluff it with a fork. Serve the grilled shrimp over the wild rice for a delicious and satisfying meal.
  7. Garnish (Optional):
    • If desired, you can garnish the dish with chopped fresh herbs, such as parsley or chives, to add an extra pop of color and flavor.
