Banana “Bread” in A Mug

Microwave Banana Bread in a Mug

Ingredients:

  • 1 ripe banana
  • 2 tablespoons natural peanut butter
  • 1 whole egg
  • 1/2 teaspoon baking powder
  • 1 teaspoon chopped walnuts
  • 1/4 teaspoon ground cinnamon

Instructions:

  1. Prep the Mug:
    • Select a microwave-safe mug or ramekin to make your banana bread. Make sure it’s large enough to allow the batter to rise without overflowing.
  2. Mash the Banana:
    • Peel the ripe banana and place it in the mug. Mash the banana using a fork until it’s mostly smooth.
  3. Add Peanut Butter and Egg:
    • Add the natural peanut butter to the mashed banana in the mug. Crack the whole egg into the mug as well.
  4. Incorporate Baking Powder and Cinnamon:
    • Sprinkle the baking powder and ground cinnamon over the mixture in the mug.
  5. Mix the Batter:
    • Use a fork to thoroughly mix all the ingredients in the mug until you have a smooth batter.
  6. Add Walnuts:
    • Gently stir in the chopped walnuts, distributing them evenly throughout the batter.
  7. Microwave the Banana Bread:
    • Place the mug in the microwave and cook on high power for about 1-2 minutes, or until the banana bread has risen, the top is set, and a toothpick inserted into the center comes out clean.
  8. Cool and Enjoy:
    • Carefully remove the mug from the microwave, as it will be hot. Allow the banana bread to cool for a minute or two before enjoying.
  9. Optional Toppings:
    • If desired, you can add a drizzle of honey, a sprinkle of extra cinnamon, or a dollop of Greek yogurt on top for added flavor and texture.

Note:

  • The cooking time may vary depending on your microwave’s wattage, so keep an eye on the banana bread as it cooks. The center should be firm and fully cooked.
  • This recipe provides a quick and easy way to satisfy your banana bread cravings without the need for a whole loaf. It’s a single serving treat that’s perfect for a cozy and delicious snack.
