Stuffed Acorn Squash

This hearty, nutrient-dense dish pairs the natural sweetness of acorn squash with the earthy flavors of quinoa, corn, and sausage. A perfect fall or winter dish, sure to please vegetarians and meat-eaters alike.

Ingredients:

  • 1 acorn squash
  • 1 cup corn (fresh, frozen, or canned)
  • 1 tofurkey sausage link (or your preferred sausage type)
  • 1/2 cup uncooked quinoa
  • Olive oil (for sautéing)
  • Salt and pepper (optional, to taste)

Directions:

  1. Prepare the Squash: Begin by washing the exterior of the acorn squash. Slice the top off of the squash to create a lid. With a spoon, scoop out the seeds and pulp, creating a hollow center.
  2. Roast the Squash: Preheat your oven to 375°F (190°C). Place the squash (and its lid) cut-side down on a baking tray lined with parchment paper. Bake in the preheated oven for about 30 minutes or until the squash becomes tender when pierced with a fork.
  3. Cook the Quinoa: While the squash is roasting, rinse the quinoa under cold water using a fine-mesh sieve. Cook according to the package directions. Once cooked, fluff with a fork and set aside.
  4. Sauté Sausage and Corn: In a skillet over medium heat, add a splash of olive oil. Slice the tofurkey sausage link into bite-sized pieces and add them to the skillet. Sauté until they start to brown. Add the corn and continue to sauté until everything is heated through.
  5. Combine the Filling: In a large bowl, mix the cooked quinoa with the sausage and corn mixture. Season with salt and pepper if desired.
  6. Stuff the Squash: Once the roasted squash is cool enough to handle, spoon the quinoa mixture into the hollow center of the squash, packing it slightly to ensure it’s filled generously.
  7. Serve: Place the stuffed squash on a plate and cover with its lid for a delightful presentation. Slice into halves or quarters, ensuring each serving has a portion of the delicious filling.

Serving Suggestion: Serve with a side salad for a balanced meal. If using meat-based sausage, ensure it’s fully cooked during the sautéing process.
