Sweet Potato Pancakes

Fluffy Sweet Potato Pancakes

Makes about 6 pancakes

Ingredients:

  • 1 cup mashed sweet potato
  • 1 cup unbleached white whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp coconut palm sugar
  • 1 cup unsweetened almond milk
  • 1 large egg, slightly beaten
  • Oil or cooking spray, for greasing the skillet

Instructions:

  1. Prepare the Sweet Potato: Cook or microwave a sweet potato until it’s soft. Once cooled, remove the skin and mash the sweet potato in a bowl until smooth.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the unbleached white whole wheat flour, baking powder, salt, and coconut palm sugar.
  3. Combine Wet Ingredients: In a separate bowl, whisk together the mashed sweet potato, unsweetened almond milk, and slightly beaten egg until well combined.
  4. Create the Batter: Pour the wet ingredients into the dry ingredients and gently stir until just combined. The batter will be thick; however, if it’s too thick for your liking, you can add a little more almond milk to achieve your desired consistency.
  5. Heat the Skillet: Heat a skillet or griddle over medium heat. Lightly mist it with oil or use cooking spray to prevent sticking.
  6. Cook the Pancakes: Using a 1/4-cup measuring cup or ladle, pour portions of the batter onto the heated skillet to form pancakes. Spread the batter slightly with the back of the ladle to create even pancakes.
  7. Watch for Doneness: Cook the pancakes for about 2 minutes on the first side. Since the batter won’t produce the same bubbles as traditional pancakes, keep a close eye on the edges and underside to avoid burning. When you see the edges firm up and the bottom is golden brown, it’s time to flip the pancake.
  8. Flip and Cook: Carefully flip the pancakes and cook for another 1-2 minutes on the other side until it’s cooked through and golden brown.
  9. Serve: Once the pancakes are cooked to your desired level of crispness, remove them from the skillet and place them on a plate. Repeat the process with the remaining batter.
  10. Enjoy: Serve the Fluffy Sweet Potato Pancakes warm with your favorite toppings, such as maple syrup, chopped nuts, fresh fruit, or a dollop of yogurt. These pancakes offer a delightful blend of flavors and a touch of sweetness, making them a perfect breakfast or brunch option.
