Sweet Potato Pancakes

I’m a big fan of sweet potatoes and I love pancakes but I will admit I was a little hesitant to try them together.  I mean, you can’t just mix your favorite foods together and like it every time.  Some things just don’t go together.  So I was very pleasantly surprised to learn that sweet potatoes and pancakes are great together!  Real Food Jr. likes sweet potatoes and pancakes too but turned her nose up at the idea of these and questioned why I would mess with pancakes.  But she gave it a shot and said they tasted just like regular pancakes.  Success!

Sweet Potato Pancakes

makes about 6 pancakes


1 cup mashed sweet potato

1 cup unbleached white whole wheat flour

2 tsp. baking powder

1/2 tsp. salt

1 tbsp. coconut palm sugar

1 cup unsweetened almond milk

1 egg, slightly beaten


Combine all ingredients until completely mixed.  Batter will be pretty thick.  If it’s too thick for your preference, add a little more milk.

Lightly mist skillet with oil over medium heat.  Drop about 1/4 cup of the mixture onto heated pan.  Cook for about 2 minutes on each side.  Batter will not bubble like regular pancake batter so you’ll want to watch pancakes carefully to avoid burning them.

Serve with real maple syrup.
