Sweet Potato Quinoa Chili

Ingredients:

  • 3 medium sweet potatoes, peeled and diced into 1-inch cubes
  • 2 cans of diced tomatoes (with juice)
  • 1 can of organic black beans, drained and rinsed
  • 1 can of great northern beans, drained and rinsed
  • 3/4 cup of uncooked quinoa, rinsed
  • 1 small onion, diced finely
  • 3 cups of water (or vegetable broth for added flavor)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp black pepper
  • Optional toppings: Sliced avocado, dollop of Greek yogurt, shredded cheese, chopped fresh cilantro, or green onions

Directions:

  1. Preparation: Begin by washing and dicing your vegetables. Rinse the quinoa under cold water using a fine-mesh strainer to remove any bitterness.
  2. Combine Ingredients: In your slow cooker, add the diced sweet potatoes, canned tomatoes (with juice), drained black beans, drained great northern beans, uncooked quinoa, diced onion, and water (or vegetable broth if using).
  3. Season: Sprinkle the chili powder, cumin, paprika, and black pepper over the mixture in the slow cooker. Give everything a good stir to combine the ingredients and distribute the spices evenly.
  4. Slow Cook: Cover the slow cooker with its lid and set it to cook on low heat for 6-8 hours. This slow and steady cooking will allow the flavors to meld together and the sweet potatoes to soften to perfection.
  5. Taste and Adjust: Once cooking is complete, give the chili a taste. Adjust the seasonings according to your preference, adding more spices or salt if needed.
  6. Serve: Dish out the hearty sweet potato quinoa chili into individual bowls. Garnish with your choice of toppings such as avocado slices, a dollop of Greek yogurt, or a sprinkle of fresh herbs or cheese.
