Directions:
- Preparation: Begin by washing and dicing your vegetables. Rinse the quinoa under cold water using a fine-mesh strainer to remove any bitterness.
- Combine Ingredients: In your slow cooker, add the diced sweet potatoes, canned tomatoes (with juice), drained black beans, drained great northern beans, uncooked quinoa, diced onion, and water (or vegetable broth if using).
- Season: Sprinkle the chili powder, cumin, paprika, and black pepper over the mixture in the slow cooker. Give everything a good stir to combine the ingredients and distribute the spices evenly.
- Slow Cook: Cover the slow cooker with its lid and set it to cook on low heat for 6-8 hours. This slow and steady cooking will allow the flavors to meld together and the sweet potatoes to soften to perfection.
