Sweet Potato Quinoa Chili

Ingredients:

  • 3 medium sweet potatoes, peeled and diced into 1-inch cubes
  • 2 cans of diced tomatoes (with juice)

  • 1 small onion, diced finely

  • 1 tsp chili powder

  • 1 tsp paprika
  • 1 tsp black pepper

Directions:

  1. Preparation: Begin by washing and dicing your vegetables. Rinse the quinoa under cold water using a fine-mesh strainer to remove any bitterness.
  2. Combine Ingredients: In your slow cooker, add the diced sweet potatoes, canned tomatoes (with juice), drained black beans, drained great northern beans, uncooked quinoa, diced onion, and water (or vegetable broth if using).
  3. Season: Sprinkle the chili powder, cumin, paprika, and black pepper over the mixture in the slow cooker. Give everything a good stir to combine the ingredients and distribute the spices evenly.
  4. Slow Cook: Cover the slow cooker with its lid and set it to cook on low heat for 6-8 hours. This slow and steady cooking will allow the flavors to meld together and the sweet potatoes to soften to perfection.
