Summer is almost here! The temperature has been steadily rising here and it’s starting to see 90 degree afternoons already. I know once the temperature creeps up and we near triple digits, we’re all going to be looking for something to cool us off!
And I have just the thing!
Nothing is quite as refreshing as a popsicle, right? Many of us have fond memories of sugary popsicles from the ice cream truck on a hot summer day. Then sticking your tongue out and it being stained red or blue to match your treat?
As an adult, I don’t get so excited about the ice cream truck or a colored tongue but I do love a creamy and refreshing treat on a hot summer day. And I also don’t want all that sugar and artificial color. Now that I have a grandson, I don’t want him to have those things either. He’s just over six months old now so has just recently started eating baby foods. My daughter is conscious of what she feeds him and has been making a lot of his baby food. I love knowing exactly what I am putting into my body and I think that is especially important for this little guy as his tastes are developing. I know that he’ll get a taste of non-healthy foods at some point, but he’s off to a great start with good nutrition.
These avocado lime popsicles are perfect for the entire family! With only 3 simple ingredients, they take less than 5 minutes to make plus some time in the freezer. Each of the ingredients adds something specific – the avocado is a dose of healthy fat and makes this a rich and creamy treat, the lime is the perfectly refreshing taste of summer, and the coconut water is loaded with electrolytes to replenish what the heat drains from you. The simplicity is absolutely genius!
When I tell you these could not be any easier to make, I’m not kidding at all! You only need one ripe avocado, juice from half a lime, and 3/4 cup coconut water. You could also use regular water if you’d like but I really like the slight coconut flavor. Add all of the ingredients to the blender (this is the one I use) and process until smooth and creamy. Then pour into popsicle molds. The hard part is waiting for them to freeze!
Each popsicle has under 100 calories as well, making it a diet friendly option!
- 1 large ripe avocado, pitted
- juice from 1/2 lime
- 3/4 cup coconut water (or regular water)
- Add all ingredients to blender and blend until smooth and creamy.
- Pour into popsicle molds and freeze until set.
