There is a restaurant in my area that my family frequents that serves an appetizer appropriately named the “Avocado Cheese Bomb.” Obviously it’s loaded with avocado and cheese, but it also has chicken in the center. The whole thing is breaded and deep fried. That would make the “bomb” part of the name and what it does to one’s diet. I try to justify it to myself that avocados are loaded with good fat and chicken is the protein we need, but clearly the deep fried aspect negates any potential nutritional benefit.
Considering that I love all things avocado and all things cheese, I had to come up with a better alternative.
These avocado cheese egg rolls give me all of the same deliciousness without the unhealthy fat – or the guilt.
And they make the perfect appetizer or vegetarian main entree because they are so incredibly simple to make; you can quickly throw them together for a last minute get together or when unexpected guests stop by.
I kept them vegetarian since I am trying to eat less meat this year, but you could add some browned hamburger meat, sausage, or shredded chicken to the mixture. Also, adding more cheese never hurt anything, right? Honestly though, these are perfect the way they are!
This was my first time making egg rolls. I always thought they were difficult to make and to get the ingredients to stay inside. As it turns out, it could not be easier!
To make these baked avocado cheese egg rolls, you only need a few ingredients: avocados, cheese, cilantro, red onion, sun dried tomatoes, lime, and egg roll wrappers.
This was the first time I had seen Borden® Cheese in shredded form, so I grabbed a couple of bags. I found my Borden® Cheese at my local Alberston’s, but check out this store locator to find Borden® Cheese near you! For this recipe, I used Borden® Cheese Finely Shredded Four Cheese Mexican Shreds, but it was a tough decision between that and Borden® Cheese Sharp Cheddar Shreds. I was so undecided in the store that I bought both! Either way, I knew my family would be happy. But why, oh why, must they make it so hard to choose with all of these delicious options? Food is just better with cheese, and I love transforming food with the love from Borden® Cheese!
Now that you’ve got all the ingredients, add them to a large bowl and gently fold them together.
Next, spoon some of the mixture into the center of each egg roll wrapper.
The next step is to wrap them up. This is the part that I thought would be difficult but totally wasn’t! First, fold the ends up like this:
Then you’ll roll each side up like this:
And that is really all there is to it! If you have never used egg roll wrappers, you may notice the white, flour looking substance. That is how the wrappers come to keep them from sticking together in the package and makes the wrappers easier to work with.
On to the fun part now! Lightly spray a baking sheet with olive oil and place each of the egg rolls seam side down.
Next, lightly spray the tops with olive oil. And now they are ready for the oven! Place the baking sheet into the oven, and cook at 350 degrees for 30 minutes. About halfway through, flip the egg rolls. Since ovens heat and cook differently sometimes, you will want to keep an eye on them to make sure they do not burn.
When they reach your desired level of brownness, remove them from the oven and allow to cool. They taste great without any dipping sauce, but dipping is always more fun, right? I used sweet and sour sauce, but chipotle ranch or even regular salsa would be amazing!
- 4 avocados, diced
- 1 cup Borden® Cheese Finely Shredded Four Cheese Mexican Shreds
- 1/2 cup red onion, diced
- 1/4 cup sun-dried tomatoes, diced
- 1/4 cup cilantro
- Juice from 1 small lime
- 8 egg roll wrappers
- Sauce, for dipping
- Preheat oven to 350 degrees F.
- In a large mixing bowl, add avocados, cheese, onion, sun-dried tomatoes, cilantro and lime juice.
- Gently fold to combine ingredients.
- Add some of the mixture to the center of each egg roll wrapper.
- Fold the ends up and then fold the sides up to meet in the center over ingredients.
- Place with the seam side down on a lightly oiled baking sheet.
- Lightly mist the tops of the egg rolls with olive oil.
- Bake for 30 minutes, or until golden brown, flipping egg rolls about halfway through.
- Allow to cool for a few minutes.
- Serve with dipping sauce and enjoy!
