After whipping up a batch of pesto, I was looking for a super easy dish to throw together for lunch. Pesto chicken pasta might be my new favorite go-to quick and easy lunch!
Chicken and pesto are always the perfect combination in my opinion so I decided that was definitely the way to go. Since I had leftover chicken breasts that needed to be eaten, it was really a no-brainer. But cooking chicken doesn’t take long either, so you can still get this on the table in just a few minutes.
To make this easy dish, prepare a box of your favorite pasta (I used whole wheat penne pasta), add pesto, and add slices or cubes of cooked chicken. Stir it all together and you’ve got a quick and easy meal ready to go!
Ingredients
- 1 box whole wheat penne pasta
- 1/2 cup pesto
- 2 chicken breasts, diced
Instructions
- Cook pasta according to package directions.
- Cook chicken thoroughly and sliced into strips or diced.
- Stir pesto into pasta.
- Add in chicken pieces and stir.
- Serve warm.
