Chia Seed Muffins

With all the craze about chia seeds, I just had to try them in various things. The chia pudding I made last week was good and I especially enjoyed them in the protein bites. So the next step was to try them in baking. And these muffins were quite good! They were ideal warmed up for breakfast because they are not sweet like standard muffins.

Chia Seed Muffins


1 1/2 c. whole wheat flour
1/2 cup oats
4 tablespoons chia seeds
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 cup turbinado
2 small bananas
1 egg
1/8 coconut oil, melted and cooled
1 teaspoon vanilla
1 cup unsweetened almond milk
walnuts (optional, to add to top)


Combine dry ingredients in a bowl and mix well. In a separate bowl, mash the bananas and add egg, oil, vanilla and milk and mix well. Stir wet ingredients into the dry mixture and stir thoroughly. Spoon mixture into 12 greased muffin cups and bake at 350 degrees Fahrenheit for 20-25 minutes until golden brown on top.
