Raw Date Squares

Embrace the natural sweetness of Medjool dates in these no-bake Raw Date Squares. With a nutty base, gooey date filling, and a crumbly topping, these squares are a delightful treat that’s not only delicious but also nutritious.

Yield: Approximately 16 squares

Ingredients:

For the crust/crumble:

  • 3 cups raw walnuts
  • 8 soft Medjool dates, pitted and chopped
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon salt

For the filling:

  • 2 cups soft Medjool dates, pitted and tightly packed
  • 1/2 cup water
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. Prepare the Pan: Line an 8×8-inch baking dish with parchment paper or plastic wrap, allowing some overhang for easy removal later.
  2. Create the Crust/Crumble: In a food processor fitted with the “S” blade, pulse the walnuts until finely ground. Add the chopped dates, melted coconut oil, and salt. Process until a sticky, cohesive dough forms. Reserve 1 cup of this mixture for the crumble topping. Press the remaining dough firmly and evenly into the bottom of the prepared pan, forming the crust.
  3. Blend the Filling: In the same food processor or a high-speed blender, combine the dates for the filling, water, vanilla, and salt. Process until smooth and creamy. Spread this date filling uniformly over the crust in the baking dish.
  4. Add the Crumble: Sprinkle the reserved 1 cup of walnut-date mixture on top of the date filling, distributing it evenly. Gently press the crumble into the filling to ensure it adheres.
  5. Set and Serve: Place the baking dish in the refrigerator and let it set for at least 2 hours. Once set, use the parchment overhangs to lift the date square slab out of the pan. Cut into 16 squares using a sharp knife. Serve chilled for the best texture.
  6. Storage: Keep any leftovers in a sealed container in the refrigerator. They’ll stay fresh for up to a week.

  • To ensure the best consistency for your squares, use soft and fresh Medjool dates.
  • These squares are versatile. Consider adding some cinnamon, cacao nibs, or even a sprinkle of shredded coconut on top for added flavor and texture.
