There are not many absolutes in life.
One thing is for sure, though – life would not be complete without chocolate.
While the awesomeness of chocolate is certain, the great debate over the best chocolate combination rages on. Is it best paired with something salty for the delectable sweet and salty combination? Or does the marriage of chocolate and peanut butter make you swoon?
Most of the time I am a decisive person. But deciding how to pair chocolate? Not so much.
Now there is no longer a reason to have to decide! You can have all of the deliciousness of sweet and salty and creamy peanut butter and chocolate all in one luscious bite.
Oh yeah, this is really happening. And it’s life changing!
So let me tell you about these RITZ Peanut Butter S’mores Sandwiches. They are super easy to make and you’ve probably already got most, if not all, of the ingredients on hand. The only ingredients you’ll need are RITZ crackers, Peter Pan® Peanut Butter, marshmallows, chocolate and sea salt. There’s no mixing, stirring or measuring required so it’s a great snack for little ones to help out with.
I picked up all the ingredients I needed while I was getting my oil changed at Walmart. How convenient is that to take care of errands and get some shopping done at the same time? I choose to think of it as being super efficient and productive. After all, my grandson needed a couple new outfits and a new toy. Anyhoo…
I swung through the snack section and picked up a box of RITZ Crackers since they are perfect for any quick and easy snack. I used the original crackers but was very tempted by the other flavors. Then down the baking aisle to pick up the marshmallows and chocolate. I used dipping chocolate because it is so easy to microwave the container and dip the s’mores in it. But feel free to use your own favorite method of dipping them. If you’d prefer to not dip them, you can always use chocolate chips or mini chocolate bars on top of the peanut butter. As long as you include chocolate, you’ll get the same amazing taste!
Like I mentioned earlier, these could not be any easier to make. To make 12 of them, you’ll need 24 RITZ Crackers, about 1/4 cup of Peter Pan® Creamy Peanut Butter, 12 marshmallows cut in half, some chocolate to melt, and a little sea salt.
Start by laying out 12 RITZ crackers on a baking sheet. Easy enough, right? And for those who like to sneak in learning opportunities for kids, this is a good way to practice counting 🙂
Next, spread a little peanut butter on each one. If you have peanut allergies, you can always switch out the peanut butter for whichever nut butter you prefer.
This is the part where you have options. I added the marshmallow here, opting to dip the s’mores sandwich in chocolate at the end. You could either add a piece of chocolate or a couple of chocolate chips here. If you go with the marshmallow option, add half a marshmallow on top. If you go with the chocolate first option, add the marshmallow on top of the chocolate.
You may notice that the peanut butter is a little melty here. There’s a super simple explanation for this. You see, I was super excited to get them in the oven, then out, then into my mouth. So, about 30 seconds after I put them in the oven, I realized that I hadn’t taken the photo and out they came for a quick photo.
Next, you’ll put the baking sheet into the oven and broil for about 2 minutes. You’ll want to watch them VERY carefully so they don’t burn and so you can get them to your perfect level of toastiness.
As soon as they come out of the oven, add another RITZ Cracker to the top and gently press it down. The top cracker won’t stick since the marshmallow top is not gooey but the chocolate will hold the sandwich together quite nicely. See how useful chocolate can be?
All that’s left to do now is add chocolate and a little sea salt (if desired). I used dipping chocolate that I could melt in the container. That made it really easy to dip half of each sandwich into. After dipping, lay them on parchment paper to allow the chocolate to set. Then they are ready to be devoured!
Here’s a simple summary of the steps (See? It doesn’t get much easier than this) :
- 24 RITZ Crackers
- 1/4 cup Peter Pan Creamy Peanut Butter
- 12 jumbo marshmallows, cut in half
- Dipping chocolate
- Sea salt, optional
- Place 12 RITZ crackers on a baking sheet, reserving the other 12 for the tops.
- Spread peanut butter on each cracker.
- Add half of a marshmallow on each peanut butter cracker.
- Place baking sheet in the oven and broil for about 2 minutes until golden brown on top. Keep a close eye to avoid burning as this can happen quickly.
- Remove from oven and top with the remaining crackers.
- Melt chocolate and dip each sandwich halfway into chocolate.
- Place on parchment paper, sprinkle with sea salt if desired, and allow chocolate to harden.
