Cherry Berry Surprise Muffins

Cherry Berry Surprise Muffins

Ingredients:

  • 1/2 cup plain Greek yogurt
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 egg whites
  • 1 1/2 cups whole wheat flour
  • 3/4 cup coconut palm sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon grated lemon zest
  • 1 cup frozen mixed berries (cherry berry blend)

Directions:

  1. Preheat and Prepare: Preheat the oven to 400°F (200°C). Lightly grease a 12-cup muffin tin with non-stick spray or line with paper liners.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the plain Greek yogurt, olive oil, lemon juice, and egg whites. Mix well until the wet ingredients are thoroughly combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the whole wheat flour, coconut palm sugar, baking powder, salt, and grated lemon zest. Ensure that the dry ingredients are evenly mixed.
  4. Combine Wet and Dry: Gradually add the dry ingredient mixture to the wet ingredients. Stir or mix gently until just combined. Be careful not to overmix; a few lumps are okay.
  5. Add Berries: Gently fold in the frozen mixed berries (cherry berry blend) until they are evenly distributed throughout the batter.
  6. Fill Muffin Cups: Divide the muffin batter equally among the 12 muffin cups, filling each cup about 2/3 full.
  7. Bake: Place the muffin tin in the preheated oven and bake for 15-17 minutes, or until the tops of the muffins spring back when lightly touched and a toothpick inserted into the center comes out clean.
  8. Cool and Enjoy: Once baked, remove the muffin tin from the oven and allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  9. Serve: Enjoy these delicious Cherry Berry Surprise Muffins as a delightful and nutritious snack or breakfast option. The combination of tangy lemon zest, sweet berries, and the heartiness of whole wheat flour makes these muffins a flavorful and satisfying treat.

Note:

  • The use of Greek yogurt in the recipe adds a creamy texture and a boost of protein to the muffins.
  • The combination of lemon juice and zest adds a refreshing citrus flavor that complements the sweet berries.
  • You can customize the frozen berries based on your preference; a cherry berry blend provides a delightful mix of flavors and colors.
