Mediterranean Baked Salmon

Ingredients:

  • Olive oil cooking spray
  • 4 (4-oz) salmon fillets
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 1/2 cups grape tomatoes, halved
  • 1 1/2 cups diced zucchini
  • 1 cup cooked or canned chickpeas, drained and rinsed
  • 1/2 cup diced onion
  • Juice of 1 lemon
  • Crumbled low-fat feta cheese
  • Chopped fresh basil

Instructions:

  1. Preheat and Prepare:
    • Preheat your oven to 425°F (220°C).
    • Cut four 14-inch squares of aluminum foil and mist the tops of each with olive oil cooking spray.
  2. Assemble the Salmon:
    • Place one piece of salmon on each piece of foil, skin side down.
    • Season the salmon fillets with sea salt and black pepper.
  3. Create the Vegetable Mixture:
    • In a large bowl, combine the minced garlic, halved grape tomatoes, diced zucchini, cooked chickpeas, diced onion, and the juice of one lemon. Mix well to ensure the ingredients are evenly distributed.
  4. Top the Salmon with Vegetables:
    • Spoon the vegetable mixture over the salmon fillets, dividing it evenly among them. The flavorful medley of vegetables will complement the salmon beautifully.
  5. Seal the Packets:
    • Bring all sides of the foil together over the top of each salmon fillet, creating a pouch.
    • Fold the edges over to create a sealed packet for each fillet.
  6. Bake in the Oven:
    • Place the foil packets on a baking dish and bake in the preheated oven for 15-20 minutes. The salmon will cook to perfection as it steams within the packets.
  7. Rest and Garnish:
    • Once the baking time is complete, carefully remove the baking dish from the oven.
    • Allow the salmon packets to stand for about 5 minutes before opening to let the flavors meld.
  8. Serve with Flavorful Touches:
    • Carefully open the foil packets. Sprinkle each salmon fillet with crumbled low-fat feta cheese and a generous amount of chopped fresh basil.
  9. Enjoy:
    • Savor the exquisite flavors of these Foil-Baked Mediterranean Salmon Packets, where the salmon is tender, the vegetables are vibrant, and the combination of feta and basil provides the perfect finishing touch.

Note: This dish is not only delicious but also visually appealing. The combination of salmon, vibrant vegetables, and Mediterranean-inspired accents makes it a well-balanced and wholesome meal option.
