Ingredients:
- 1 cup quinoa (uncooked)

- 2 eggs, beaten
- 1 cup carrots, peeled and shredded
- 1 cup green beans, washed and sliced
- Cooking spray or muffin liners (optional, for easy removal)
Directions:
- Cook the Quinoa: In a medium pot, cook the quinoa according to the package directions. Once cooked, remove from heat and let it cool for about 15 minutes.
- Preheat Oven: While the quinoa is cooling, preheat your oven to 350°F (175°C).
- Prepare Muffin Tins: Lightly spray a muffin tin with cooking spray or line with muffin liners to prevent sticking.
- Combine Ingredients: In a large bowl, combine the cooled quinoa, cheese, beaten eggs, shredded carrots, and sliced green beans. Mix everything together until all the ingredients are well incorporated.
- Fill Muffin Tins: Spoon the mixture into the prepared muffin tins, filling each cup almost to the top. Sprinkle a little extra cheese on top of each muffin for a tasty finish.
